pineapple smoothie (lactose free)
I got this recipe from a friend who is lactose intolerant. I found it to be delicious and so easy to make that I prefer it to a regular pineapple smoothie. I hope you like it, too. Picture is free clip art.

Ingredients
- 1 cup silk's plain soymilk or similar lactose free milk substitute
- 1 can (8 ounces) unsweetened crushed pineapple
- 1/2 cup pineapple juice
- 3 tablespoons honey, sugar or equivalent sugar substitute
- 1/2 teaspoon vanilla extract
- 1/4 cup coconut
- 6 - ice cubes
How To Make pineapple smoothie (lactose free)

Step 1Place all ingredients except ice cubes in a blender and process until smooth. Coconut should be chopped very fine. Add ice cubes a couple at a time and continue to process until ice is crushed and incorporated into the drink completely. Pour into chilled glasses and serve immediately.
