To enjoy a cup of chai, mix equal parts concentrate to equal parts milk of your choice.

This recipe yields a concentrate that is relatively low in sugar. Sweeten with additional sugar or honey to taste. For the best black tea flavor, we recommend using CTC Assam or Ceylon BOPF tea leaves.

Ingredients For chai tea concentrate

  • 1 tsp
    cloves
  • 4
    cinnamon sticks
  • 1 tsp
    black peppercorns
  • 1/4 tsp
    fennel seed
  • 1
    whole star anise
  • 20 g
    ginger
  • 2
    inch peel of orange
  • 4 1/2 c
    water
  • 50 g
    white sugar
  • 1/4 c
    tea leaves (12g or 8 bags)
  • ICED CHAI LATTE (1 SERVING)
  • 1 c
    ice
  • 1/2 c
    chai tea concentrate
  • 2 tsp
    sugar
  • 1/2 c
    milk

How To Make chai tea concentrate

    To make the concentrate, crush the cardamom, cloves, cinnamon sticks, peppercorns, fennel, anise, and ginger together with a mortar and pestle.

    Toast the crushed spices in a medium sized pot over medium heat for about 2 minutes. Stir frequently to prevent burning.

    Add water and orange peel. Bring to a boil, then reduce heat to lowest setting. Cover and cook for 30 minutes.

    After steeping, stir in the sugar until fully dissolved.

    Remove pot from heat, add the tea leaves, and steep for 8 minutes.

    Strain the mixture with a fine sieve and reserve the liquid in a container. Allow to cool before storing in the refrigerator for up to two weeks.
