top shelf essentials: el presidente’ margarita

We have some awesome margarita recipes on this site; however, I cannot bring one with me when I am on the road. When I am lecturing, I fly out on Sunday morning, and usually fly back home on Friday evening. I have a tradition while waiting for my flight home at the airport… I have a margarita (or two). The problem is that no two bartenders will make a margarita the same way… except at Chili’s Bar & Grill. You can find the ingredients on several copycat sites, but the game changer is the sour mix… I will talk more about that later. So, you ready… Let’s get into the kitchen.

What is it? Well, it is one of the best, on-the-road margaritas you will ever experience.

What to serve with it? Serve it with more of the same. Actually, when I am at a Chili’s Bar and Grill on the road, I order an Oldtimer Burger with fries and a pitcher of El Presidente’ margaritas. Oh yeah baby.

How to store it? You do not store it… you drink it.

The Missing Piece to the Puzzle I had all the ingredients and the proper proportions, but the missing piece was, what was the sour mix made from? Chili’s restaurants used to make it on site, but after they got so big, they decided to premix it and send it out. But, at one of the Chili’s I visited, I met a bartender that worked there long enough to know how it was made. It is 2 ounces of freshly squeezed lime juice, 2 ounces of freshly squeezed lemon juice, 3 ounces of simple syrup. Some bartenders would also add a bit of raw egg whites. After I made that, and assembled the drink, I had my perfect Chili’s El Presidente’ margarita. Oh yeah baby.

OH NO… RAW EGGS!!! You have heard all the horror stories on the use of raw eggs, and you wonder if you can safely use them in your recipe, or figure out a way to substitute them with something else. There is a way to use raw eggs, and virtually eliminate the possibility of getting sick. https://www.justapinch.com/recipes/side/other-side-dish/sous-vide-essentials-pasteurized-eggs.html
