strawberry-mint sparkling limeade cocktail

A refreshing summer drink. Have berries, lime juice, water and wine well chilled before making. Substitute 3 cups chilled club soda or seltzer water for the wine, for a non-alcoholic version. This calls for agave nectar, but honey could be used. Agave is sweeter than honey so you may have to add more honey to taste.

Ingredients

  • 3 cups sliced fresh strawberries
  • 1/2 cup loosely packed fresh mint leaves (i like spearmint)
  • 1/2 cup fresh lime juice
  • 1/4 cup water
  • 1/4 cup agave syrup (nectar)
  • 740 milliliters champagne, dry (chilled)
  • 6 - whole strawberries (optional)

How To Make strawberry-mint sparkling limeade cocktail

  • Step 1
    Place first 5 ingredients in a blender; process until smooth (about 1 minute).
  • Step 2
    Pour about 1/2 cup strawberry mixture into each of 6 glasses. (use tall, flute-type).
  • Step 3
    Slowly pour about 1/2 cup wine into each glass (tilt glass slightly and pour wine down side to keep it from foaming too much); gently stir to combine.
  • Step 4
    Garnish with whole berries, if desired.
