vanilla pudding with watermelon flakes

This is a quick and easy dessert ;that will impress your family! Enjoy!! Any leftover flaked watermelon makes a great base for a slushy just add juice or liqueur..

yield makes 4 servings pudding and 4 cups watermelon flakes.

Ingredients

  • 6 ounces package vanilla cook and serv pudding
  • 3 cups milk
  • 4 cups seedless watermelon
  • 1/4 cup granulated sugar
  • 2 tablespoons lime juice

How To Make vanilla pudding with watermelon flakes

  • Step 1
    Remove rind from melon and cut the red flesh into small pieces and place in blender with lime juice. Pulse until a smooth liquid. May have to poke down with wooden spoon handle..carefully
  • Step 2
    Pour liquid into shallow pan with sides. Place pan in freezer for 1 hour; then flake with the tines of a fork. https://www.justapinch.com/groups/discuss/142219/here-are-some-basic-hints Put back in the freezer for another hour.Flake again. Return to freezer for another hour.
  • Step 3
    Flake one more time and place in freezer until ready to use.
  • Step 4
    In a saucepan combine the vanilla pudding and the milk. Whisk pudding over medium until pudding comes to a boil and cook for 1 minute.Remove from heat. Pour into 4 serving dessert dishes. When cold and ready to serve sprinkle watermelon flakes on top and sprinkle with pinch of granulated sugar. Enjoy!
