Ingredients
- 6 cups bread cubes (1-inch cubes-about 6 slices)
- 1 can (13 oz) coconut milk
- 1 can (6 oz) pineapple juice
- 1/4 cup butter, melted
- 1/2 cup granulated sugar
- 2 - eggs
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground ginger
How To Make tropical bread pudding

Step 1Preheat oven to 350F. Lightly coat a 1 1/2 quart baking dish with nonstick cooking spray.

Step 2Place cubed bread in a large mixing bowl; set aside.

Step 3In another bowl, mix remaining ingredients until well blended. Pour over the bread and stir to moisten bread.

Step 4Pour mixture into the baking dish. Bake 40-45 minutes, or until knife inserted into center comes out clean.

Step 5Cool on wire rack. May be served warm or room temperature. Store leftovers in refrigerator.
