Ingredients

  • 6 c
    bread cubes (1-inch cubes-about 6 slices)
  • 1 can(s)
    (13 oz) coconut milk
  • 1 can(s)
    (6 oz) pineapple juice
  • 1/4 c
    butter, melted
  • 1/2 c
    granulated sugar
  • 2
    eggs
  • 1/4 tsp
    salt
  • 1/2 tsp
    ground cinnamon
  • 1/2 tsp
    ground nutmeg
  • 1/2 tsp
    ground ginger

How to Make Tropical Bread Pudding

Step-by-Step

  1. Preheat oven to 350F. Lightly coat a 1 1/2 quart baking dish with nonstick cooking spray.
  2. Place cubed bread in a large mixing bowl; set aside.
  3. In another bowl, mix remaining ingredients until well blended. Pour over the bread and stir to moisten bread.
  4. Pour mixture into the baking dish. Bake 40-45 minutes, or until knife inserted into center comes out clean.
  5. Cool on wire rack. May be served warm or room temperature. Store leftovers in refrigerator.
