SWEET POTATO RICE PUDDING

1 carborio rice
1 Tbsptransfat-free vegetable oil spread, melted
1 ccooked sweet potato cubes
1/3 csweetened flaked coconut
1/2 ccoconut milk
1 cbrown sugar
1/2 cdried apricots, coarsely chopped
1carton (32 oz.) vanilla flavored almond milk
1/2 clight cream
How to Make SWEET POTATO RICE PUDDING
- Stir rice and vegetable oil spread into a slow cooker coated with cooking spray.
- Puree the sweet potatoes, coconut, coconut milk, brown sugar, cinnamon, and allspice in a blender.
- Transfer to cooker and add apricots, almond milk, and cream. Stir.
- Cover. Cook on HIGH setting, stirring halfway through, for 2 to 2-1/2 hours, or until creamy.
Serve with a dollop of whipped cream sprinkled with cinnamon.
