Ingredients
- 1 cup arborio rice
- 1 tablespoon transfat-free vegetable oil spread, melted
- 1 cup cooked sweet potato cubes
- 1/3 cup sweetened flaked coconut
- 1/2 cup coconut milk
- 1 cup brown sugar
- 1 teaspoon cinnamon
- 1/2 teaspoon allspice
- 1/2 cup dried apricots, coarsely chopped
- 1 - carton (32 oz.) vanilla flavored almond milk
- 1/2 cup light cream
How To Make sweet potato rice pudding

Step 1Stir rice and vegetable oil spread into a slow cooker coated with cooking spray.

Step 2Puree the sweet potatoes, coconut, coconut milk, brown sugar, cinnamon, and allspice in a blender.

Step 3Transfer to cooker and add apricots, almond milk, and cream. Stir.

Step 4Cover. Cook on HIGH setting, stirring halfway through, for 2 to 2-1/2 hours, or until creamy. Serve with a dollop of whipped cream sprinkled with cinnamon.
