This is something I found on some old floppy discs from the 1990s, from a BBS I used to belong to. I haven't made it yet and the cooking time wasn't given, so I estimated. Putting some of those old recipes here for safe keeping.

1 lb
raw sweet potatoes, peeled
1/2 c
1/8 tsp
1/8 tsp
ground nutmeg (or more to taste)
1 tsp
vanilla extract
eggs, separated
2 c
2 Tbsp
unsalted butter, melted

How to Make Sweet Potato Pudding


  • 1Preheat oven to 350F. Grease (or use nonstick spray) a 2 quart baking dish or casserole.
  • 2Grate sweet potatoes, using the shredder disc of a food processor, or a box grater. You should have about 2 cups of grated raw potato.
  • 3In a mixing bowl, add sugar, nutmeg and vanilla to potatoes.
  • 4In a bowl, beat egg yolks, stir in milk and melted butter and add to potato mixture.
  • 5In a clean bowl, beat egg whites until stiff. Fold into potato mixture.
  • 6Bake 45-50 minutes, or until firm.
  • 7Serve warm, topping with whipped cream
