sweet potato pudding

This is something I found on some old floppy discs from the 1990s, from a BBS I used to belong to. I haven't made it yet and the cooking time wasn't given, so I estimated. Putting some of those old recipes here for safe keeping.

Ingredients
- 1 pound raw sweet potatoes, peeled
- 1/2 cup sugar
- 1/8 teaspoon salt
- 1/8 teaspoon ground nutmeg (or more to taste)
- 1 teaspoon vanilla extract
- 2 - eggs, separated
- 2 cups milk
- 2 tablespoons unsalted butter, melted
How To Make sweet potato pudding

Step 1Preheat oven to 350F. Grease (or use nonstick spray) a 2 quart baking dish or casserole.

Step 2Grate sweet potatoes, using the shredder disc of a food processor, or a box grater. You should have about 2 cups of grated raw potato.

Step 3In a mixing bowl, add sugar, nutmeg and vanilla to potatoes.

Step 4In a bowl, beat egg yolks, stir in milk and melted butter and add to potato mixture.

Step 5In a clean bowl, beat egg whites until stiff. Fold into potato mixture.

Step 6Bake 45-50 minutes, or until firm.

Step 7Serve warm, topping with whipped cream
