This is something I found on some old floppy discs from the 1990s, from a BBS I used to belong to. I haven't made it yet and the cooking time wasn't given, so I estimated. Putting some of those old recipes here for safe keeping.

Ingredients For sweet potato pudding

  • 1 lb
    raw sweet potatoes, peeled
  • 1/2 c
    sugar
  • 1/8 tsp
    salt
  • 1/8 tsp
    ground nutmeg (or more to taste)
  • 1 tsp
    vanilla extract
  • 2
    eggs, separated
  • 2 c
    milk
  • 2 Tbsp
    unsalted butter, melted

How To Make sweet potato pudding

    Preheat oven to 350F. Grease (or use nonstick spray) a 2 quart baking dish or casserole.

    Grate sweet potatoes, using the shredder disc of a food processor, or a box grater. You should have about 2 cups of grated raw potato.

    In a mixing bowl, add sugar, nutmeg and vanilla to potatoes.

    In a bowl, beat egg yolks, stir in milk and melted butter and add to potato mixture.

    In a clean bowl, beat egg whites until stiff. Fold into potato mixture.

    Bake 45-50 minutes, or until firm.

    Serve warm, topping with whipped cream
