strawberry curd

This curd is so flavorful and easy to make . There is so many uses you can use this curd for. I use this in my jelly rolls..yummy

Ingredients

  • 16 oz. packages frozen sliced strawberries in syrup ; thawed and drained
  • 1 cup sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice, fresh
  • 3 large egg yolks ; slightly beaten
  • 1/4 cup butter ; cut into chunks
  • 1 teaspoon strawberry extract

How To Make strawberry curd

  • Step 1
    Puree' strawberries in a food processor or a blender until smooth.
  • Step 2
    In a sauce pan , combine sugar , cornstarch , puree' , lemon juice and the yolks together.
  • Step 3
    Cook on medium heat until very thick ; whisking constantly so it don't stick for about 8 minutes.
  • Step 4
    Remove from the heat and whisk in the butter and extract until well combined.
  • Step 5
    Cover and refrigerate until chilled and set ; about 2 hours.
  • Step 6
    Use for filling in donuts , jelly rolls , cakes ..ect.
