After all these years, I finally got this recipe from my mother in-law.
It's actually a combination of the best parts of two recipes.

Ingredients

Add to Grocery List

1/2 c
rice, long grain uncooked
2
eggs
1/2 c
sugar
1/2 tsp
salt
2 c
milk
1 tsp
vanilla
nutmeg, for garnish

How to Make Rice Custard Pudding

Step-by-Step

  • 1Wash rice and drain thoroughly.
    Cook according to package directions, making sure all water is absorbed and the rice is tender.
  • 2Beat eggs slightly, add sugar, vanilla, and salt. Stir in milk.
    Add cooked rice.
    Turn into a 1 quart baking dish.
    Sprinkle the top lightly with nutmeg.
  • 3Place baking dish into a larger dish with 1 inch of water.
    (a water bath)
    This keeps the rice from burning on the bottom.
  • 4Bake at 325 degrees, for 1 1/2 to 2 hours.
