rice custard pudding
Luckily, my mother-in-law shared this recipe with me before she passed away. She combined parts of 2 recipes to make this delicious rice pudding. Enjoy!

Ingredients
- 1/2 cup rice, long grain uncooked
- 2 - eggs
- 1/2 cup sugar
- 1/2 teaspoon salt
- 2 cups milk
- 1 teaspoon vanilla
- - nutmeg, for garnish
How To Make rice custard pudding

Step 1Wash rice and drain thoroughly. Cook according to package directions, making sure all water is absorbed and the rice is tender.

Step 2Beat eggs slightly, add sugar, vanilla, and salt. Stir in milk. Add cooked rice. Turn into a 1 quart baking dish. Sprinkle the top lightly with nutmeg.

Step 3Place baking dish into a larger dish with 1 inch of water. (a water bath) This keeps the rice from burning on the bottom.

Step 4Bake at 325 degrees, for 1 1/2 to 2 hours. (It takes closer to 2 hours in my oven.)
