This recipe has raisins in it &if anyone who just loves rice & pudding this a good one if you haven't try it yet... My mom use to make this & everyone like it real good in my family & I hope other people will enjoy this as much as we did...

Ingredients

  • 4
    eggs
  • 2 c
    cold cooked rice
  • 1 c
    coconut
  • 1 c
    raisins
  • 1 c
    sugar
  • 1/4 tsp
    salt
  • 2 1/2 c
    milk
  • 1/2 tsp
    vanilla extract
  • 1 tsp
    orange peel
  • ·
    small amount of butter

How to Make Rice & Coconut Pudding

Step-by-Step

  1. Mix all together , except the butter,eggs, milk, vanilla & orange peel. Pour into a buttered baking dish, beat the eggs lightly & combined with the milk & vanilla. Then pour over the rice mixture & sprinkle the orange peel over top. Set baking dish in pan of water & bake 45 minutes at 350 in the oven . Check on it cause alot of peoples ovens are so different from everybody's. Only you know your oven. This serves 8 & I hope that everyone enjoy this as much as my family & me did...
