real banana pudding

love this recipe for nana pudding. NO INSTANT here! good old fashioned full of flavor If you do not have evaporated milk you can use 8 ounces of milk and 3 ounces of 1/2 n 1/2 cream (this is for one can of ) I sometimes use 1 can of evap and one of the sub just for a twist on the flavor.

Ingredients

  • 2 1/2 cups sugar
  • 6 tablespoons all purpose flour
  • pinch - salt
  • 2 cans evaporated milk
  • 4 - egg yolks
  • 1/2 stick butter. cubed
  • 1 teaspoon vanilla extract
  • 1 box vanilla wafers cookies
  • 5 - bananas sliced
  • - whip cream

How To Make real banana pudding

  • Step 1
    in a 3 qt saucepan over med heat. pour evaporated milk and add sugar flour and salt. Whisk constantly . Mix will thicken slowly @ 15 minutes.
  • Step 2
    lightly beat egg yolks . Add ladleful of thickened mixture to slowly temper eggs , repeat until 1/2 of mixture is used then add back into saucepan with remaining mixture continue to whisk and add butter and vanilla .. cook @ 4 minutes more
  • Step 3
    cover and refrigerate for 2- 3 hours
  • Step 4
    in large bowl or trifle dish.. layer vanilla wafers layer of sliced banana top with pudding add whipped cream and then repeat the layers
