Ingredients

pudding, sugar free vanilla (small box)
1 tsp
cinnamon, ground
1/2 tsp
ginger, ground
1/4 tsp
nutmeg
1 1/2 c
2% milk
1 c
canned pumpkin puree
1 c
cool whip, fat free
3
gingersnap cookies, crushed

How to Make Pumpkin Mousse

Step-by-Step

  • 1Whisk dry pudding with the spices to mix thoroughly.
  • 2Whisk in milk. Whisk 2 minutes.
  • 3Add pumpkin and whisk until it begins to set. Fold in Cool-Whip.
  • 4Cover aqnd chill for 1 hour.
  • 5In 6 small dessert cups, add 1/4 cup of the pudding - sprinkle with crushed gingernsaps - add another layer of pudding.
