Picked up the recipe from a magazine at the doctor's office. Tried it and it's delish!

  • 1 pkg
    pudding, sugar free vanilla (small box)
  • 1 tsp
    cinnamon, ground
  • 1/2 tsp
    ginger, ground
  • 1/4 tsp
  • 1 1/2 c
    2% milk
  • 1 c
    canned pumpkin puree
  • 1 c
    cool whip, fat free
  • 3
    gingersnap cookies, crushed

How to Make Pumpkin Mousse


  1. Whisk dry pudding with the spices to mix thoroughly.
  2. Whisk in milk. Whisk 2 minutes.
  3. Add pumpkin and whisk until it begins to set. Fold in Cool-Whip.
  4. Cover aqnd chill for 1 hour.
  5. In 6 small dessert cups, add 1/4 cup of the pudding - sprinkle with crushed gingernsaps - add another layer of pudding.
