Picked up the recipe from a magazine at the doctor's office. Tried it and it's delish!

Ingredients

  • 1 package pudding, sugar free vanilla (small box)
  • 1 teaspoon cinnamon, ground
  • 1/2 teaspoon ginger, ground
  • 1/4 teaspoon nutmeg
  • 1 1/2 cups 2% milk
  • 1 cup canned pumpkin puree
  • 1 cup cool whip, fat free
  • 3 - gingersnap cookies, crushed

How To Make pumpkin mousse

  • Step 1
    Whisk dry pudding with the spices to mix thoroughly.
  • Step 2
    Whisk in milk. Whisk 2 minutes.
  • Step 3
    Add pumpkin and whisk until it begins to set. Fold in Cool-Whip.
  • Step 4
    Cover aqnd chill for 1 hour.
  • Step 5
    In 6 small dessert cups, add 1/4 cup of the pudding - sprinkle with crushed gingernsaps - add another layer of pudding.
