mom's rice pudding

This is my mom's rice pudding recipe. It is perfect and amazing (when she makes it). Although I have been able to make most of her recipes, this one eludes me. I have yet to make it as good as she does. This is why I don't have a picture of it-YET.

Ingredients For mom's rice pudding

  • 1 qt
    whole milk
  • 1 qt
    water
  • 1 1/3 c
    carolina rice
  • 1 1/3 c
    sugar
  • 2
    egg yolks
  • 1 Tbsp
    vanilla
  • 1/2 pt
    light cream
  • 1 1/2 c
    raisins (optional)
  • cinnamon for sprinkling (optional)

How To Make mom's rice pudding

  • 1
    Mix milk, water, rice, and sugar in a saucepan over medium heat for 45 minutes, stirring constantly.

    Add raisins (if applicable) and continue to cook for 15 minutes more.

    Remove from heat

    In a separate bowl, mix egg yolks, vanilla, and cream
  • 5
    Pour egg mixture into pudding pan
  • 6
    Pour mixture into a bowl and allow to cool at room temperature for about 30 minutes, until a crust forms on top
  • 7
    Sprinkle with cinnamon (optional), cover, and refrigerate
