Ingredients
- 2 large eggs, lightly beaten
- 1 1/2 cups milk
- 1/4 cup granulated sugar
- 1/4 cup molasses
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1/4 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1 1/4 cups cooked white rice
- 1/2 cup raisins (optional-or use dried cranberries)
How To Make molasses rice pudding

Step 1Preheat oven to 350F. Coat a 1-quart oven-proof casserole dish with nonstick cooking spray.

Step 2In a medium bowl, whisk eggs, milk, sugar, molasses, salt, vanilla, cinnamon and nutmeg. Stir in cooked rice and raisins, if using.

Step 3Place in prepared casserole dish and cover. Bake 1 hour, or until mixture is set (when stable knife inserted in center comes out clean).

Step 4Serve warm or chilled, topped with a dollop of whipped cream, if desired.
