Ingredients

  • 2 large eggs, lightly beaten
  • 1 1/2 cups milk
  • 1/4 cup granulated sugar
  • 1/4 cup molasses
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 1/4 cups cooked white rice
  • 1/2 cup raisins (optional-or use dried cranberries)

How To Make molasses rice pudding

  • Step 1
    Preheat oven to 350F. Coat a 1-quart oven-proof casserole dish with nonstick cooking spray.
  • Step 2
    In a medium bowl, whisk eggs, milk, sugar, molasses, salt, vanilla, cinnamon and nutmeg. Stir in cooked rice and raisins, if using.
  • Step 3
    Place in prepared casserole dish and cover. Bake 1 hour, or until mixture is set (when stable knife inserted in center comes out clean).
  • Step 4
    Serve warm or chilled, topped with a dollop of whipped cream, if desired.
