  • 2 large
    eggs, lightly beaten
  • 1 1/2 c
  • 1/4 c
    granulated sugar
  • 1/4 c
  • 1/2 tsp
  • 1 tsp
    vanilla extract
  • 1/4 tsp
    ground cinnamon
  • 1/2 tsp
    ground nutmeg
  • 1 1/4 c
    cooked white rice
  • 1/2 c
    raisins (optional-or use dried cranberries)

How to Make Molasses Rice Pudding


  1. Preheat oven to 350F. Coat a 1-quart oven-proof casserole dish with nonstick cooking spray.
  2. In a medium bowl, whisk eggs, milk, sugar, molasses, salt, vanilla, cinnamon and nutmeg. Stir in cooked rice and raisins, if using.
  3. Place in prepared casserole dish and cover. Bake 1 hour, or until mixture is set (when stable knife inserted in center comes out clean).
  4. Serve warm or chilled, topped with a dollop of whipped cream, if desired.
