low carb spiced custard

I am always looking for GOOD low carb recipes...as few carbs as possible and has to taste GOOD because I would rather do without than eat something that just doesn't taste good. I have tried this recipe and it is quite good. I hope to try it the next time using cocoa powder for a chocolate custard. I also want to try to make a bigger batch and stick some in the freezer to see if it will satisfy an ice cream craving.

Ingredients

  • 2 large eggs
  • 1/4 cup splenda
  • 1 1/2 teaspoons pumpkin pie spice
  • 1/4 teaspoon salt
  • 11 ounces unsweetened almond "milk"...i used almond breeze
  • 6 ounces water
  • 1/2 teaspoon vanilla extract

How To Make low carb spiced custard

  • Step 1
    Mix together the eggs, splenda, pumpkin pie spice and salt.
  • Step 2
    Then mix in the milk, water, and vanilla.
  • Step 3
    Pour into 3 ramekin/custard dishes sprayed with cooking spray. Place ramekins in baking dish in 1 inch of hot water.
  • Step 4
    Bake at 350 degrees for 50-55 minutes. Let sit 15-20 minutes. Eat warm or cover with plastic wrap and cool completely in refrigerator.
