A light, creamy dessert for two. I have never tried unmolding these, but it is an option. If desired, serve with whipped cream or fresh raspberries, blackberries or sliced kiwi. Cook time is refrigeration time.

Ingredients

  • 1/4 ounce gelatin, unflavored (1 envelope)
  • 5/8 cup cold milk
  • 6 ounces lime-flavored yogurt
  • 1/4 cup honey
  • 1/8 cup lime juice (fresh squeezed is best)
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon grated lime zest

How To Make lime panna cotta for 2

  • Step 1
    Place milk in a small saucepan and sprinkle gelatin over top of milk. Let stand for 1 minute.
  • Step 2
    Turn heat to medium-low and stir until gelatin is dissolved, about 5 minutes. Remove from heat.
  • Step 3
    Whisk in yogurt, honey, lime juice, vanilla and lime zest until blended in.
  • Step 4
    Divide mixture between 2 8-10 ounce custard cups or ramekins. Cover with plastic wrap and refrigerate until set, about 3 hours.
  • Step 5
    Serve in cups, garnished with whipped cream and/or fresh berries.
