lemon souffle
I've searched but cannot find a lemon souffle that does not have flour in it... like my mother's recipe so I am including it for that brave soul who would like to make a souffle. It sounds easy enough... enjoy!

Ingredients
- 4 - egg yolks
- 1 cup sugar
- 1 - lemon (juice and grated rind)
- 4 - egg whites beaten to stiff peaks
How To Make lemon souffle

Step 1Beat egg yolks until thick and lemon colored

Step 2Add sugar gradually and continue beating

Step 3Add lemon rind and juice

Step 4Fold in whites of egg beaten stiff

Step 5Put into buttered baking dish and set in pan of hot water -- bake 40 minutes 350 oven
