- CRUST LAYER
- 1/2 cup corse ground pecans
- 2 sticks butter, unsalted
- 2 teaspoons vanilla extract
- 2 cups ap flour
- CREAM CHEESE LAYER
- 2-8oz packages cream cheese, room temperature
- 1/2 cup confectioners' sugar
- 1/4 teaspoon lemon rind, grated
- PUDDING LAYER
- 3 3.5oz boxes instant lemon pudding mix
- 4 cups very cold milk
- TOP LAYER
- 1 small container cool whip
- 1/2 cup ground pecans
How To Make lemon delight

Step 1Preheat over to 375 Mix flour, vanilla, butter and 1/2 cup of ground pecans together and spread evenly in the bottom of a glass 9X13 baking pan, Bake at 375 for 15 min, remove from oven and cool

Step 2Whip room temp cream cheese, lemon rind and confectioners sugar together and spread over crust after it has cooled

Step 3Mix pudding and milk together till thickened and spread over cream cheese layer, set in fridge 10min to set a tad

Step 4Cover with cool whip and sprinkle 1/2 cup of ground pecans over top, refrigerate till set, serve, enjoy!!!
