This recipe started out as a casserole pudding type recipe, but ended up as a souffle. My family likes it. I served it last Christmas and it was enjoyed by everyone and they wanted the recipe. I hope you try it and enjoy this holiday pudding/souffle too.

Ingredients

5 medium
sweet potatoes, boiled, peeled and mashed
1/3 c
butter
1 1/4 c
brown sugar, packed
4 large
egg yolks, reserve whites
1/2 c
sherry
1 dash(es)
salt
1 tsp
nutmeg
1/4 tsp
ground mace
2 large
reserved egg whites, stiffly beaten

How to Make Kitchen Chatter's Yam Souffle

Step-by-Step

  • 1Cream together the butter and sugar and mix in the beaten egg yolks, the mashed sweet potatoes, sherry and seasonings. Fold in the egg whites and pour the mixture into a buttered casserole and bake at 350^ for 40 minutes.
