This recipe started out as a casserole pudding type recipe, but ended up as a souffle. My family likes it. I served it last Christmas and it was enjoyed by everyone and they wanted the recipe. I hope you try it and enjoy this holiday pudding/souffle too.

Ingredients
- 5 medium sweet potatoes, boiled, peeled and mashed
- 1/3 cup butter
- 1 1/4 cups brown sugar, packed
- 4 large egg yolks, reserve whites
- 1/2 cup sherry
- 1 dash salt
- 1 teaspoon nutmeg
- 1/4 teaspoon ground mace
- 2 large reserved egg whites, stiffly beaten
How To Make yam souffle

Step 1Cream together the butter and sugar and mix in the beaten egg yolks, the mashed sweet potatoes, sherry and seasonings. Fold in the egg whites and pour the mixture into a buttered casserole and bake at 350^ for 40 minutes.
