My grandmother had 11 kids- that is 13 mouths to feed if everyone was home.
She was a frugal cook and my Dad said that if you could make a good meal out of nothing, like she did, then you were a good cook.

Ingredients

2 c
real rice, cooked accoring to directions and let stand - add
1 c
raisins
1/2 c
sugar
1/2 tsp
nutmeg
1/2 tsp
cinnamon
3
eggs or
3/4 c
egg substitute
3 1/2 c
milk
1 tsp
vanilla extract

How to Make Grandma Meehan's baked rice pudding

Step-by-Step

  • 1Cook rice, set aside until warm.
  • 2Toss with raisins. set aside.
  • 3Combine milok and eggs, mixing in a blender add vanilla, sugar and spices. Blend on med. until frothy.
  • 4Pour over the rice mixture. and bake at 300 degrees until set clear through, about 40 min.
