~ grams comforting rice custard ~
This is one of my favorite custards my gram made when I was a child. Mom had her recipe and finally shared with me. Now, my kids can enjoy it as well. Yum!

Ingredients
- 7 - beaten xl eggs
- 3/4 cup sugar
- 1/2 cup evaporated milk
- 2 cups milk
- 1 cup cooked, long grain rice
- 4 ounces pineapple tid bits and juice ( like snak pak size )
- 7 1/2 ounces ricotta cheese
- 1 1/2 teaspoons vanilla
- sprinkle - of cinnamon
How To Make ~ grams comforting rice custard ~

Step 1Cook rice and set aside. Preheat oven to 350 degree F. Butter a 9 x 13 casserole dish.

Step 2In a large bowl, whisk eggs. Whisk in the sugar,well.

Step 3Next add milks, vanilla, pineapple and juice, rice and ricotta cheese. Whisk until thoroughly combined. Pour into prepared dish and sprinkle the top with cinnamon.

Step 4Bake for 45 minutes or until you can slide a knife in the center and it comes out clean.

Step 5Serve with a dollop of whipped cream if desired. This can be eaten warm or cold. Delicious either way.
