This is one of my favorite custards my gram made when I was a child. Mom had her recipe and finally shared with me. Now, my kids can enjoy it as well.

Ingredients

7
beaten xl eggs
3/4 c
sugar
1/2 c
evaporated milk
2 c
milk
1 c
cooked, long grain rice
4 oz
pineapple tid bits and juice ( like snak pak size )
7 1/2 oz
ricotta cheese
1 1/2 tsp
vanilla
sprinkle
of cinnamon

How to Make ~ Grams Comforting Rice Custard ~

Step-by-Step

  • 1Cook rice and set aside.

    Preheat oven to 350 degree F.

    Butter a 9 x 13 casserole dish.
  • 2In a large bowl, whisk eggs. Whisk in the sugar,well.
  • 3Next add milks, vanilla, pineapple and juice, rice and ricotta cheese. Whisk until thoroughly combined.

    Pour into prepared dish and sprinkle the top with cinnamon.
  • 4Bake for 45 minutes or until you can slide a knife in the center and it comes out clean.
  • 5Serve with a dollop of whipped cream if desired.


    This can be eaten warm or cold. Delicious either way.
