My friend Erlene made this for a pot luck dinner at work and I actually saw my manager lick the plate!!!

Ingredients

  • 1 box - graham crackers
  • 2 - 3oz. boxes instant french vanilla pud/pie mix
  • 3 1/2 c. - cold milk
  • 1 - 9oz. cool whip
  • 3 tablespoons butte or oleo
  • 2 oz. - unsweetened chocolate
  • 2 tablespoons white karo syrup
  • 1 teaspoon vanilla
  • 3 tablespoons milk
  • 1 1/2 c. - powdered sugar

How To Make eclair cake

  • Step 1
    butter 9x13 pan. line bottom with a layer of graham crackers. prepare pudding w/milk and blend with cool whip. put half of mixture over layer of graham crackers.
  • Step 2
    place another layer of graham crackers on mixture. pour rest of mixture on crackers. top mixture with 3rd layer of crackers. top with chocolate topping.
  • Step 3
    melt butter/chocolate. remove from heat and add syrup, vanilla, milk, powder sugar. mix well and spread over top of graham crackers. refrigerate overnight. GREAT!!
