My friend Erlene made this for a pot luck dinner at work and I actually saw my manager lick the plate!!!

Ingredients

1 box
graham crackers
2
3oz. boxes instant french vanilla pud/pie mix
3 1/2 c.
cold milk
1
9oz. cool whip
3 Tbsp
butte or oleo
2 oz.
unsweetened chocolate
2 Tbsp
white karo syrup
1 tsp
vanilla
3 Tbsp
milk
1 1/2 c.
powdered sugar

How to Make Eclair Cake

Step-by-Step

  • 1butter 9x13 pan. line bottom with a layer of graham crackers. prepare pudding w/milk and blend with cool whip. put half of mixture over layer of graham crackers.
  • 2place another layer of graham crackers on mixture. pour rest of mixture on crackers. top mixture with 3rd layer of crackers. top with chocolate topping.
  • 3melt butter/chocolate. remove from heat and add syrup, vanilla, milk, powder sugar. mix well and spread over top of graham crackers. refrigerate overnight. GREAT!!
