Ingredients
- 2 cups flour
- 2 tsp baking powder
- 1/2 tsp soda
- 1/2 tsp salt
- 1/3 cup butter or shortening
- 2/3 cup brown sugar
- 1 large egg
- 1 tbsp, freshly squeezed lemon juice + 1 tsp minced lemon rind
- 1 cup buttermilk
- 1 cup fresh, blackberries, washed and drained
- 1 cup fresh, blueberries, washed and drained
How To Make blue & black baked berry pudding

Step 1Preheat oven at 350 degrees for 10 minutes before putting pudding in oven.

Step 2Grease a 7 x 11 x 2 baking dish well and set aside until needed.

Step 3In a medium size bowl sift the flour, baking powder, baking soda and salt. Set aside until needed.

Step 4In a large bowl, blend the butter until smooth then add the sugar. Blend the mixture well then beat in the egg until fluffy.

Step 5Next stir in the lemon juice and lemon rind, then add the flour and then the milk alternating. (start and finish with the flour) Mix until smooth and then fold in the berries.

Step 6Bake at 350 for 30 - 35 minutes then increase the heat to 400 degrees and bake for 10 more minutes or until the pudding is golden brown.

Step 7Serve plain with a little powdered sugar or try it with a nice rich lemon sauce or lemon or vanilla ice cream.
