betty's caramel and banana self saucing pudding
Warm banana cake on top of a rich caramel sauce. This makes a LARGE dessert, enough to keep my teenage sons happy. Serve with whipped cream or vanilla ice cream.

Ingredients
- 2 1/2 cups self rising flour
- 1 cup brown sugar, lightly packed
- 1/3 cup butter, melted
- 2 1/2 cups mashed bananas
- 1 teaspoon cinnamon
- 2/3 cup milk
- CARAMEL SAUCE
- 2 1/2 cups boiling water
- 1 cup brown sugar, lightly packed
- 2 tablespo butter, chopped

Step 1Preheat oven to 180oC/365oF. Grease a large dish - about 16 cup capacity.

Step 2Mix all the cake ingredients together and pour into the prepared dish.

Step 3Pour over the caramel sauce and bake in the preheated oven for 55 - 60 minutes. Cool for 5 minutes before serving

Step 4Caramel sauce - in a large jug combine everything together- let the butter melt.
