tropical nut pie
This is a recipe my mother brought home when she took a trip to Hawaii. She had written it down on the hotel stationary. Not sure what the origin is, but she made it often when she first came home from Hawaii.

1 9" pie
Ingredients
- 1 cup sugar
- 1 cup flaked coconut
- 3/4 cup macadamia nuts, coarsely chopped
- `1 cup light corn syrup
- 1/4 cup whipping cream
- 3 large eggs, lightly beaten
- 1 tablespoon vegetable oil
- 1 - 9-inch pastry shell (i make my own or use a refrigerated cooked pie crust)
How To Make tropical nut pie

Step 1Combine the first 7 ingredients in a medium bowl; stir well.

Step 2Pour the filling into the pastry shell.

Step 3Bake at 350 degrees for 50 to 60 minutes or until a knife inserted 2 inches from the center comes out clean.

Step 4Cool on a wire rack.
