This is a recipe my mother brought home when she took a trip to Hawaii. She had written it down on the hotel stationary. Not sure what the origin is, but she made it often when she first came home from Hawaii.

Ingredients For tropical nut pie

  • 1 c
    sugar
  • 1 c
    flaked coconut
  • 3/4 c
    macadamia nuts, coarsely chopped
  • `1 c
    light corn syrup
  • 1/4 c
    whipping cream
  • 3 lg
    eggs, lightly beaten
  • 1 Tbsp
    vegetable oil
  • 1
    9-inch pastry shell (i make my own or use a refrigerated cooked pie crust)

How To Make tropical nut pie

  • 1
    Combine the first 7 ingredients in a medium bowl; stir well.
  • 2
    Pour the filling into the pastry shell.
  • 3
    Bake at 350 degrees for 50 to 60 minutes or until a knife inserted 2 inches from the center comes out clean.

    Cool on a wire rack.
