sweet azuki bean pie
If you are familiar with Chinese steamed buns filled with red bean paste, you will delight in this pie. During my time learning to speak Chinese in school, I worked in a Asian food mart/Chinese restaurant. That is where I fell in love with it. This is an American rendition of an Asian favorite.

Ingredients
- 1 pound azuki beans
- 1/2 cup butter, unsalted, room temperature
- 2 - eggs
- 1/2 cup sugar
- 1/2 cup dark brown sugar
- 1/2 cup cream or whole milk
- 1/2 teaspoon cinnamon
- 1/2 teaspoon allspice
- 1/2 teaspoon ginger
- 1 tablespoon vanilla
- 1 - autumn pie crust, see recipe
How To Make sweet azuki bean pie

Step 1Boil beans until soft. Rinse.

Step 2Preheat oven to 350.

Step 3Place bean in food processor or blender with butter. Blend until smooth.

Step 4Add other ingredients, blend for an additional minute.
