My friend, who is Greek and Albanian gave me this recipe. She made it for me once and it was the best one I've had yet!

Ingredients
- 3 tablespoons olive oil
- 1 large onion, chopped
- 1 bunch green onions, chopped
- 2 teaspoons minced garlic
- 2 pounds washed, chopped fresh spinach
- 1/2 cup chopped fresh parsley
- 1 tablespoon lemon juice
- 2 - eggs, lightly beaten
- 1/2 cup part-skim ricotta cheese
- 1 cup crumbled feta cheese
- 8 - sheets phyllo dough
- 1/4 cup olive oil
How To Make spanakopita, ( greek spinach pie.)

Step 1Heat oven to 350. Lightly spray a 9 x 9" baking pan w/ cooking spray. Heat 3 tbsp oil in lg skillet over medium heat. Saute onions, green onions and garlic until soft. Stir in spinach, parsley and lemon juice. Saute until spinach is limp. Remove from heat and cool.

Step 2In bowl, mix together eggs, ricotta cheese and feta cheese. Stir in spinach mix. Lay 1 sheet of dough in pan, ( dough will overlap the pan,) brush lightly w/ oil. Lay another sheet of dough over top and brush w/ oil. Repeat w/ 2 more sheets of dough and some oil.

Step 3Spread spinach mix evenly onto sheets of dough. Fold overhanging dough over filling. Brush w/ oil. Layer w/ remaining 4 sheets of dough and oil. Tuck in overhanging dough to seal. Bake 40 mins, or until golden brown. Cut into squares.
