southwest shepherd's pie

I made this about a year ago and my family loved it! My aunt recently had a heart transplant and is on a gluten free diet. I was racking my brain to think of something to cook for her. Found this when I was going through my files. She loved it!

Ingredients
- 4 - medium potatoes, boiled, drained and mashed with a little butter and milk
- 1 pound lean ground beef, browned and drained
- 1 14 oz. cans black beans, rinsed
- 1 cup frozen corn
- 1 cup mild salsa or picante sauce
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1/2 cup shredded cheddar cheese
How To Make southwest shepherd's pie

Step 1Preheat oven to 350 degrees. Spray 8 or 9 inch square pan with non-stick cooking spray.

Step 2In skillet the beef was browned in, over low heat, stir together beef, black beans, corn, salsa, chili powder, and cumin. Spread in bottom of pan.

Step 3Spread mashed potatoes over top of beef mixture. Sprinkle with shredded cheese.

Step 4Baked for 10-15 minutes or until cheese is melted.
