sour lemon pie

I will heartily recommend this pie. It is made just the way I like it, quick and easy. The lemon is lightly tart, and not too sweet. This pie is very good in light, flaky crust. If you like lemon, you will like this one.

Ingredients
- 1 - keebler ready crust graham cracker pie crust
- 1 1/4 cup - sugar
- 1/3 cup - cornstarch
- 1/4 tsp - salt
- 1 3/4 cup - water
- 4 - egg yolks
- 1 tbs - margarine
- 2 tsp - fine grated lemon zest
- 1/4 cup - lemon juice
- 1/2 cup - sour cream
- 3 drops - yellow food coloring (optional)
How To Make sour lemon pie

Step 1In saucepan, combine sugar, cornstarch, and salt. Beat water and egg yolks until blended. Add to sugar mixture.

Step 2Stir constantly over medium heat until thick and boiling. Boil 1 minute. Remove from heat.

Step 3Add margarine, lemon zest, lemon juice and food coloring. Sttir until margarine is melted. Stir in sour cream, blending until smooth. Pour into crust. Chill 2 to 4 hours. (option) Stir 1 cup oextra creamy cool whip to lemon mixture for a more creamy texture.
