Sour Lemon Pie

1keebler ready crust graham cracker pie crust

1 1/4 cupsugar

1/3 cupcornstarch

1/4 tspsalt

1 3/4 cupwater

4egg yolks
-
1 tbsmargarine
-
2 tspfine grated lemon zest
-
1/4 cuplemon juice

1/2 cupsour cream
-
3 dropsyellow food coloring (optional)
How to Make Sour Lemon Pie
- In saucepan, combine sugar, cornstarch, and salt. Beat water and egg yolks until blended. Add to sugar mixture.
- Stir constantly over medium heat until thick and boiling. Boil 1 minute. Remove from heat.
- Add margarine, lemon zest, lemon juice and food coloring. Sttir until margarine is melted. Stir in sour cream, blending until smooth. Pour into crust. Chill 2 to 4 hours. (option) Stir 1 cup oextra creamy cool whip to lemon mixture for a more creamy texture.
