I will heartily recommend this pie. It is made just the way I like it, quick and easy. The lemon is lightly tart, and not too sweet. This pie is very good in light, flaky crust. If you like lemon, you will like this one.
1In saucepan, combine sugar, cornstarch, and salt. Beat water and egg yolks until blended. Add to sugar mixture.
2Stir constantly over medium heat until thick and boiling. Boil 1 minute. Remove from heat.
3Add margarine, lemon zest, lemon juice and food coloring. Sttir until margarine is melted. Stir in sour cream, blending until smooth. Pour into crust. Chill 2 to 4 hours. (option) Stir 1 cup oextra creamy cool whip to lemon mixture for a more creamy texture.
