soda cracker pie
Another recipe from my childhood. While many people will not know what soda crackers are, I kept the name because it's traditional. It's just an old term for saltine crackers!

Ingredients
- 3 - egg whites
- 1/2 teaspoon baking powder
- 1 cup sugar
- 14 - soda crackers, crushed (saltine crackers)
- 1 cup chopped pecans
- 1/2 pint heavy whipping cream
- dash vanilla
How To Make soda cracker pie

Step 1Preheat oven to 350.

Step 2Beat egg whites until stiff. Add baking powder and sugar while still beating.

Step 3Fold in cracker crumbs and nuts.

Step 4Pour into 9 inch pie pan.

Step 5Bake 30 minutes.

Step 6Cool completely.

Step 7Whip the cream into stiff peaks, add a dash of vanilla. Top the pie with the cream. Cover and refrigerate at least 2 hours. It gets better the longer it sits!
