I wanted to make a lighter version of pumpkin pie, but with full-flavor and came up w/ this.
It's light and fluffy, yet dense in taste.

9"-pie shell, homemade, or refrigerated
2 c
solid-packed pumpkin puree
1/2 c
2 large
1 c
fat-free evaporated milk
1 tsp
1/2 tsp
ground ginger
1 pinch
ground cloves
1 pinch
ground nutmeg

How to Make Sherry's easy lightened-up pumpkin pie


  • 1Heat oven to 350. Spray a 9"-pie pan w/ cooking spray. Place pie shell in pan. Place pie pan on baking sheet. In lg bowl, combine pumpkin, sugar, eggs, milk, cinnamon, ginger, cloves and nutmeg.
  • 2Mixed until thoroughly combined. Pour mix into pie shell. Bake 45 mins, or until set.
