I wanted to make a lighter version of pumpkin pie, but with full-flavor and came up w/ this.
It's light and fluffy, yet dense in taste.

    9"-pie shell, homemade, or refrigerated
  • 2 c
    solid-packed pumpkin puree
  • 1/2 c
  • 2 large
  • 1 c
    fat-free evaporated milk
  • 1 tsp
  • 1/2 tsp
    ground ginger
  • 1 pinch
    ground cloves
  • 1 pinch
    ground nutmeg

How to Make Sherry's easy lightened-up pumpkin pie


  1. Heat oven to 350. Spray a 9"-pie pan w/ cooking spray. Place pie shell in pan. Place pie pan on baking sheet. In lg bowl, combine pumpkin, sugar, eggs, milk, cinnamon, ginger, cloves and nutmeg.
  2. Mixed until thoroughly combined. Pour mix into pie shell. Bake 45 mins, or until set.
