I wanted to make a lighter version of pumpkin pie, but with full-flavor and came up w/ this. It's light and fluffy, yet dense in taste.

Ingredients

  • 1 - 9"-pie shell, homemade, or refrigerated
  • 2 cups solid-packed pumpkin puree
  • 1/2 cup sugar
  • 2 large eggs
  • 1 cup fat-free evaporated milk
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ground ginger
  • 1 pinch ground cloves
  • 1 pinch ground nutmeg

How To Make sherry's easy lightened-up pumpkin pie

  • Step 1
    Heat oven to 350. Spray a 9"-pie pan w/ cooking spray. Place pie shell in pan. Place pie pan on baking sheet. In lg bowl, combine pumpkin, sugar, eggs, milk, cinnamon, ginger, cloves and nutmeg.
  • Step 2
    Mixed until thoroughly combined. Pour mix into pie shell. Bake 45 mins, or until set.
