I hope this is a blue ribbon winner. This is the best flavor of sweet potato pie I have ever had. This pie recipe was created and made by a dear friend of mine who was there when it really counted.

Ingredients

eggs, room temperature
1/2 c
cube of butter, melted
3/4 c
sugar
1/2 c
sugar
1 c
applesauce
1 c
eggnog
3 Tbsp
vanilla extract
1/2 tsp
lemon extract
3 Tbsp
kahlua
2 Tbsp
flour
nutmeg and cinnamon

How to Make Sandra's Sweet Potato Pie

Step-by-Step

  • 1Preheat oven at 325º
  • 2Peel potatoes and cut up like for fried potatoes, crossways. Mash potatoes with ¾ c sugar and then add melted butter. Set aside
  • 3Mix applesauce with cinnamon and nutmeg. Add ½ c sugar, mix. Add eggnog, mix well. Add extracts and kahlua mix well again, now add to the sweet potato mixture. Set aside.
  • 4Separate eggs and mix yolks in a bowl, set aside.
  • 5Put egg whites in mixer and beat until stiff and still wet, not meringue-like. Fold into sweet potato mixture and then gently stir in egg yolks, add flour. Pour into pie shells and bake for 1 ½ hrs.
