I hope this is a blue ribbon winner. This is the best flavor of sweet potato pie I have ever had. This pie recipe was created and made by a dear friend of mine who was there when it really counted.

Ingredients

  • 3 - sweet potatoes, baked
  • 6 - eggs, room temperature
  • 1/2 cup cube of butter, melted
  • 3/4 cup sugar
  • 1/2 cup sugar
  • 1 cup applesauce
  • 1 cup eggnog
  • 3 tablespoons vanilla extract
  • 1/2 teaspoon lemon extract
  • 3 tablespoons kahlua
  • 2 tablespoons flour
  • - nutmeg and cinnamon

How To Make sandra's sweet potato pie

  • Step 1
    Preheat oven at 325º
  • Step 2
    Peel potatoes and cut up like for fried potatoes, crossways. Mash potatoes with ¾ c sugar and then add melted butter. Set aside
  • Step 3
    Mix applesauce with cinnamon and nutmeg. Add ½ c sugar, mix. Add eggnog, mix well. Add extracts and kahlua mix well again, now add to the sweet potato mixture. Set aside.
  • Step 4
    Separate eggs and mix yolks in a bowl, set aside.
  • Step 5
    Put egg whites in mixer and beat until stiff and still wet, not meringue-like. Fold into sweet potato mixture and then gently stir in egg yolks, add flour. Pour into pie shells and bake for 1 ½ hrs.
