sandra's sweet potato pie
I hope this is a blue ribbon winner. This is the best flavor of sweet potato pie I have ever had. This pie recipe was created and made by a dear friend of mine who was there when it really counted.

Ingredients
- 3 - sweet potatoes, baked
- 6 - eggs, room temperature
- 1/2 cup cube of butter, melted
- 3/4 cup sugar
- 1/2 cup sugar
- 1 cup applesauce
- 1 cup eggnog
- 3 tablespoons vanilla extract
- 1/2 teaspoon lemon extract
- 3 tablespoons kahlua
- 2 tablespoons flour
- - nutmeg and cinnamon
How To Make sandra's sweet potato pie

Step 1Preheat oven at 325º

Step 2Peel potatoes and cut up like for fried potatoes, crossways. Mash potatoes with ¾ c sugar and then add melted butter. Set aside

Step 3Mix applesauce with cinnamon and nutmeg. Add ½ c sugar, mix. Add eggnog, mix well. Add extracts and kahlua mix well again, now add to the sweet potato mixture. Set aside.

Step 4Separate eggs and mix yolks in a bowl, set aside.

Step 5Put egg whites in mixer and beat until stiff and still wet, not meringue-like. Fold into sweet potato mixture and then gently stir in egg yolks, add flour. Pour into pie shells and bake for 1 ½ hrs.
