I hope this is a blue ribbon winner. This is the best flavor of sweet potato pie I have ever had. This pie recipe was created and made by a dear friend of mine who was there when it really counted.

    sweet potatoes, baked

    eggs, room temperature
  • 1/2 c
    cube of butter, melted
  • 3/4 c
  • 1/2 c
  • 1 c
  • 1 c
  • 3 Tbsp
    vanilla extract
  • 1/2 tsp
    lemon extract
  • 3 Tbsp
  • 2 Tbsp
  • ·
    nutmeg and cinnamon

How to Make Sandra's Sweet Potato Pie


  1. Preheat oven at 325º
  2. Peel potatoes and cut up like for fried potatoes, crossways. Mash potatoes with ¾ c sugar and then add melted butter. Set aside
  3. Mix applesauce with cinnamon and nutmeg. Add ½ c sugar, mix. Add eggnog, mix well. Add extracts and kahlua mix well again, now add to the sweet potato mixture. Set aside.
  4. Separate eggs and mix yolks in a bowl, set aside.
  5. Put egg whites in mixer and beat until stiff and still wet, not meringue-like. Fold into sweet potato mixture and then gently stir in egg yolks, add flour. Pour into pie shells and bake for 1 ½ hrs.
