rose's sweet potato pie

This is a Southern favorite in my household. It is one of those desserts that reminds me of Christmas, because Mama, Made 3 or 4 of these during the holidays, and we always enjoyed them. I made these during the holidays, froze two and kept one out to serve. I just love the hint of lemon in this recipe. It is one of my many favorite desserts.

Ingredients

  • 2 cups cooked sweet potatoes
  • 1/2 teaspoon salt
  • 1 can 13 oz. evaporated milk
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon extract
  • 3/4-1 cup granulated sugar
  • 2 large eggs, beaten (room temperature)
  • 2-3 tablespoons melted butter
  • 1 tablespoon all purpose flour
  • 1 - 9 inch deep pie shell

How To Make rose's sweet potato pie

  • Step 1
    PREHEAT OVEN TO 350 DEGREES F. Beat or mash sweet potatoes until smooth in texture and no visible lumps remain. REMOVE ANY STRINGS that wrap around the beater.
  • Step 2
    Add remaining ingredients and beat until well blended. Pour into unbaked pie shell and bake in preheated 350 degree F. oven for 1 hour or until filling is set, and crust is browned. Allow to cool completely before serving.
