rose's sweet potato pie
This is a Southern favorite in my household. It is one of those desserts that reminds me of Christmas, because Mama, Made 3 or 4 of these during the holidays, and we always enjoyed them. I made these during the holidays, froze two and kept one out to serve. I just love the hint of lemon in this recipe. It is one of my many favorite desserts.

Ingredients
- 2 cups cooked sweet potatoes
- 1/2 teaspoon salt
- 1 can 13 oz. evaporated milk
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1 teaspoon vanilla extract
- 1 teaspoon lemon extract
- 3/4-1 cup granulated sugar
- 2 large eggs, beaten (room temperature)
- 2-3 tablespoons melted butter
- 1 tablespoon all purpose flour
- 1 - 9 inch deep pie shell
How To Make rose's sweet potato pie

Step 1PREHEAT OVEN TO 350 DEGREES F. Beat or mash sweet potatoes until smooth in texture and no visible lumps remain. REMOVE ANY STRINGS that wrap around the beater.

Step 2Add remaining ingredients and beat until well blended. Pour into unbaked pie shell and bake in preheated 350 degree F. oven for 1 hour or until filling is set, and crust is browned. Allow to cool completely before serving.
