I wanted to make dulche de leche but I didn't have any sweetened condensed milk. I found a recipe for dulche de leche online that used evaporated milk. My roommate is having a cub scouts pack meeting and needed something for her group. We had a vanilla bean and instant vanilla pudding in the cupboard. So I went to the store and picked up some coolwhip. And Vou La!

Ingredients

  • FOR DULCHE DE LECHE:
  • 1 (12) ounce can of evaporated milk
  • 3/4 cup brown sugar, firmly packed
  • 3/4 cup butter
  • (MAKES ABOUT 2 CUPS)
  • FOR VANILLA CREAM:
  • 1 - vanilla bean
  • 1 (8) ounce pkg. instant vanilla pudding mix
  • 3/4 cup milk
  • 1 - recipe dulche de leche
  • 2 (8) ounces container of coolwhip, divided
  • 1 - 9-in. cooked pie crust
  • - smuckers caramel topping

How To Make roni's dulche de leche vanilla cream pie

  • Step 1
    In a medium sauce pan combine milk, sugar and butter. Cook on very low heat, stirring constantly. Remove from heat just as it begins to thicken and smelling like caramel. (Takes about 20-30 minutes to thicken and makes about 2 cups)
  • Step 2
    Take off heat and let cool.
  • Step 3
    Slice down the center of the vanilla bean with a sharp knife. Open and scrape seeds from the vanilla bean into a large bowl. Add pudding mix, milk and Dulche de Leche. Using a hand mixer on med, mix until thick and smooth. Fold in 8 oz. Coolwhip until blended. Pour into pie crust.
  • Step 4
    Top with remaining 8 oz. of coolwhip using decorating bag and your favorite tip. Drizzle caramel topping over the top. Refrigerate 1 hour.
