THIS IS FROM MY MOMS RECIPE BOOK. I LOVE RHUBARB. WHEN WE WERE KIDS, WE WOULD GET A STALK OF RHUBARB AND EAT IT RAW WITH SALT SPRINKLED ON IT.

Ingredients
- 3 cups rhubarb, cut in one inch pieces
- 1 1/4 cups sugar
- - or
- 3/4 cup honey
- 1/4 cup all purpose flour
- 2 - eggs, lightly beaten
- 1 - 9" unbaked pastry shell
How To Make rhubarb custard pie

Step 11. Preheat oven to 400 degrees.

Step 22. Except for pie shell, mix all ingredients lightly in a bowl.

Step 33. Pour into unbaked pie shell.

Step 44. Bake for 50-60 minutes, until when knife inserted in center comes out clean.
