This is another of Bisquick's impossible pies in "short form", "mini's". Just the right size for that buffet table.
These delicious pies are quick and no-muss, no-fuss and turns out great every-time!

Ingredients

1 c
100% solid pure pumpkin
1/2 c
bisquick
1/2 c
brown sugar,packed
1 tsp
cinnamon, ground
1/2 tsp
ginger powder
1/4 tsp
clove, ground
3/4 c
evaporated milk
1 tsp
vanilla extract
2 large
eggs

How to Make Pumpkin Pie Mini's

Step-by-Step

  • 1Heat oven to 375^. Spray 12 regular size muffin cups with cooking spray.
  • 2In a medium bowl, stir all ingredients until blended. Pour 1/4 cup mixture into each muffin cup.
    Bake 30 minutes or until tops are golden brown and edges are starting to pull away from sides of pan.
  • 3Cool 10 minutes in pan then loosen sides with a knife; remove from pan and place on wire rack to cool completely.Serve with a dollop of whipped cream on each mini pie, if desired.
