Pumpkin Pie Mini's
These delicious pies are quick and no-muss, no-fuss and turns out great every-time!
1 c100% solid pure pumpkin
1/2 cbrown sugar,packed
1 tspcinnamon, ground
1/2 tspginger powder
1/4 tspclove, ground
3/4 cevaporated milk
1 tspvanilla extract
How to Make Pumpkin Pie Mini's
- Heat oven to 375^. Spray 12 regular size muffin cups with cooking spray.
- In a medium bowl, stir all ingredients until blended. Pour 1/4 cup mixture into each muffin cup.
Bake 30 minutes or until tops are golden brown and edges are starting to pull away from sides of pan.
- Cool 10 minutes in pan then loosen sides with a knife; remove from pan and place on wire rack to cool completely.Serve with a dollop of whipped cream on each mini pie, if desired.
