This is another of Bisquick's impossible pies in "short form", "mini's". Just the right size for that buffet table. These delicious pies are quick and no-muss, no-fuss and turns out great every-time!

Ingredients

  • 1 cup 100% solid pure pumpkin
  • 1/2 cup bisquick
  • 1/2 cup brown sugar,packed
  • 1 teaspoon cinnamon, ground
  • 1/2 teaspoon ginger powder
  • 1/4 teaspoon clove, ground
  • 3/4 cup evaporated milk
  • 1 teaspoon vanilla extract
  • 2 large eggs

How To Make pumpkin pie mini's

  • Step 1
    Heat oven to 375^. Spray 12 regular size muffin cups with cooking spray.
  • Step 2
    In a medium bowl, stir all ingredients until blended. Pour 1/4 cup mixture into each muffin cup. Bake 30 minutes or until tops are golden brown and edges are starting to pull away from sides of pan.
  • Step 3
    Cool 10 minutes in pan then loosen sides with a knife; remove from pan and place on wire rack to cool completely.Serve with a dollop of whipped cream on each mini pie, if desired.
