Ingredients
- PUMPKIN PIE FILLING
- 2 - eggs
- 3/4 cup sugar
- 1 teaspoon cinnamon
- 1/2 teaspoon ginger
- 1/4 teaspoon cloves
- 1 can pumpkin
- 1 can fat free evaporated milk
- PIE CRUST
- 2 cups flour
- 1/2 teaspoon salt
- 2 teaspoons baking powder
- 2/3 cup butter or shortening
- 1/2 cup ice cold water
- 1 egg, beaten
- 1 teaspoon lemon juice
How To Make pumpkin pie

Step 1For Pie Crust: Mix flour, salt, baking powder and butter. In a separate small bowl beat egg, add cold water, and lemon juice. Mix. Combine wet and dry ingredients. Chill dough if needed to roll out (30-60 minutes). Roll out dough on floured surface. Line baking dish and crimp edges of pie. Bake pie crust at 425 degrees for 15 minutes. Using beans or pie weights is ideal to prevent bubbled crust.

Step 2Mix together all filling ingredients. Pour in baked pie shell. Bake for 20-30 minutes at 350 degrees, until knife comes out clean.
