I had this delicious pie at a pie social in the small community of Freisland WI the woman told me how to make it. Since I didn't have paper and pen, my sister memorized the first half and I memorized the second half. That's team work.

Ingredients

  • 1 c
    milk
  • 1 c
    coconut
  • 3/4 c
    light corn syrup
  • 3/4 c
    regular oatmeal
  • 1 stick
    butter, melted
  • 2
    eggs, beaten
  • 1/2 c
    brown sugar
  • 1/2 c
    white sugar
  • 1 tsp
    vanilla
  • 1/2 c
    walnut pieces
  • 1
    unbaked 9 inch pie shell

How to Make Tina's Poor Man's mock pecan pie

Step-by-Step

  1. Preheat oven to 425 degrees. Combine all ingredients except nuts and pie shell in a bowl. Pour into pie shell
  2. Sprinkle with walnut pieces
  3. Bake 425 degree oven for 10 minutes. Reduce heat to 350 degrees and bake 20-25 minutes more.
