pineapple cream pie

My family loves sweets and this is a very basic recipe that can be adapted for different things such as a vanilla pudding (omit pineapple). For example I use this for banana puddings.

Ingredients
- 3/4 cup sugar
- 3 tablespoons cornstarch
- 2 cups milk
- 3 large eggs, separated
- 1 can crushed pineapple (drained)
- 1 teaspoon vanilla
- 1 1/2 tablespoons butter
How To Make pineapple cream pie

Step 1Mix sugar & cornstarch in heavy saucepan

Step 2Add milk & mix well. Cook on med heat until bubbly. Cook for 2 min. Stir constantly.

Step 3Remove from heat & temper egg yolks. Add to mixture & cook for another 2 min stirring constantly.

Step 4Remove from heat. Add vanilla & butter. Add drained pineapple.

Step 5Pour into baked 9" pie crust & top with meringue.
