Found the recipe on the recipe but make lighter for Diabetic person.

Ingredients

  • 1 cup cold milk or non-fat milk
  • 1 package instant vanilla pudding or sugar-free mix
  • 1/2 cup flaked coconut
  • 1 can (8oz) unseetened crushed pineapple, drained
  • 1 - (9inches) pastry or graham pie shell
  • 1 - tub of cool whip or light cool whip

How To Make pineapple coconut pie

  • Step 1
    In a large bow, whisk milk and pudding mix for 2 minutes. Let sit for 2 minutes or until thickened. Stir in coconut and pineapple. Pour into baked pastry or graham shell. Chill for at least 2 hours. Garnish with whipped topping. Yield: 8 servings.
