peppermint pie / w chocolate butter fluff topping

This pie made with gelatin, peppermint candy,and chocolate. Serve with chocolate butter fluff topping is a great treat to serve to Santa with a great cup of coffee or tea.

Ingredients

  • 1 package unflavored gelatin (1 teaspoon)
  • 1/4 cup cold water
  • 2 large egg yolks, unbeaten
  • 1 1/4 cups milk
  • 1/2 cup finely crushed peppermint candy
  • 1/2 cup whipped cream
  • 1-2 dash red food coloring drops
  • 2 large egg whites
  • 1/4 cup granulated sugar
  • - 9-inch pie shell or graham cracker crust, baked
  • CHOCOLATE BUTTER FLUFF TOPPING:
  • 6 teaspoons butter
  • 2 ounces unsweetened chocolate, melted
  • 1 teaspoon vanilla extract
  • 1/2 cup granulated sugar
  • 1 1/2 cups thawed cool whip

How To Make peppermint pie / w chocolate butter fluff topping

  • Step 1
    Sprinkle gelatin over cold water. Stir to dissolve. Combine egg yolks and milk and cook and stir over low heat until mixture coats a metal spoon. Pour over gelatin mixture. Add candy; stir until dissolved. Chill. When slightly thickened, fold in whipped cream and coloring. Beat egg white until foamy, then add sugar gradually, beating until peaks hold. Fold in gelatin mixture. Spoon into pie shell; chill until firm. Spread chocolate butter fluff on top and chill again.

    Chocolate Butter Fluff Topping: Cream butter thoroughly. Add sugar gradually; beat until light and fluffy. Add chocolate, vanilla. Beat for 3 minutes until smooth. Fold in Cool Whip blending until smooth and thick. Spread on chilled pie and refrigerate until set.
