Ingredients

  • TOPPING MIXTURE
  • 3/4 cup brown sugar
  • 1/2 cup old fasioned oats
  • 2/3 cup a.p. flour
  • 1 teaspoon cinnamon, scant
  • 6 tablespoons butter, softened
  • 1/4 teaspoon salt
  • pinch ground nutmeg
  • FILLING
  • 6 cups fresh peaches, peeled and sliced into wedges or uniform chunks
  • 1/2 cup granulated sugar
  • 3 tablespoons a.p. flour
  • 1 tablespoon instant tapioca - if peaches are really juicy

How To Make peach crisp with fresh peaches

  • Step 1
    Preheat oven to 350*. Butter a 2 quart baking dish.
  • Step 2
    Gently combine fruit wedges with flour, sugar and spices. Note: I use "Flaming Fury" peaches and they are super juicy, so I also add a tablespoon of instant tapioca granules to the mix.
  • Step 3
    Place mixture in baking dish.
  • Step 4
    In separate bowl, combine topping ingredients until blended and you have coarse, pea sized pieces. I just use my fingers.
  • Step 5
    Crumble topping over the top of the fruit, sprinkle evenly but don't worry if it is a little bumpy looking.
  • Step 6
    Note: If your baking dish is shallow and your fruit and topping is nearly reaching the rim, place a cookie sheet or foil on a lower rack to catch drips.
  • Step 7
    Bake 40-45 minutes, until peaches are tender and topping is crusty and golden brown.
