Peach Crisp with Fresh Peaches
fresh peaches, peeled and sliced into wedges or uniform chunks
instant tapioca - if peaches are really juicy
1Preheat oven to 350*. Butter a 2 quart baking dish.
2Gently combine fruit wedges with flour, sugar and spices. Note: I use "Flaming Fury" peaches and they are super juicy, so I also add a tablespoon of instant tapioca granules to the mix.
3Place mixture in baking dish.
4In separate bowl, combine topping ingredients until blended and you have coarse, pea sized pieces. I just use my fingers.
5Crumble topping over the top of the fruit, sprinkle evenly but don't worry if it is a little bumpy looking.
6Note: If your baking dish is shallow and your fruit and topping is nearly reaching the rim, place a cookie sheet or foil on a lower rack to catch drips.
7Bake 40-45 minutes, until peaches are tender and topping is crusty and golden brown.
