Ingredients
- TOPPING MIXTURE
- 3/4 cup brown sugar
- 1/2 cup old fasioned oats
- 2/3 cup a.p. flour
- 1 teaspoon cinnamon, scant
- 6 tablespoons butter, softened
- 1/4 teaspoon salt
- pinch ground nutmeg
- FILLING
- 6 cups fresh peaches, peeled and sliced into wedges or uniform chunks
- 1/2 cup granulated sugar
- 3 tablespoons a.p. flour
- 1 tablespoon instant tapioca - if peaches are really juicy
How To Make peach crisp with fresh peaches

Step 1Preheat oven to 350*. Butter a 2 quart baking dish.

Step 2Gently combine fruit wedges with flour, sugar and spices. Note: I use "Flaming Fury" peaches and they are super juicy, so I also add a tablespoon of instant tapioca granules to the mix.

Step 3Place mixture in baking dish.

Step 4In separate bowl, combine topping ingredients until blended and you have coarse, pea sized pieces. I just use my fingers.

Step 5Crumble topping over the top of the fruit, sprinkle evenly but don't worry if it is a little bumpy looking.

Step 6Note: If your baking dish is shallow and your fruit and topping is nearly reaching the rim, place a cookie sheet or foil on a lower rack to catch drips.

Step 7Bake 40-45 minutes, until peaches are tender and topping is crusty and golden brown.
