Ingredients For old fashion sweet potato pie

  • PIE FILLING:
  • 2 c
    sweet potato
  • 1 c
    sugar
  • 4 Tbsp
    butter, melted
  • 2
    eggs, large
  • 1 tsp
    vanilla extract
  • 2 Tbsp
    bourbon
  • 1/4 tsp
    salt
  • 1/4 tsp
    cinnamon
  • 1/4 tsp
    ginger
  • 1 c
    milk
  • 1
    unbaked pie shell
  • MERINGUE:
  • 3
    egg whites
  • 1/4 c
    sugar

How To Make old fashion sweet potato pie

    Preheat oven to 350 F.
  • 2
    Peel, cube and cooked sweet potatoes. I generally microwave cubed sweet potatoes for about 4 to 7 minutes in micro safe dish with a little bit of water.

    For the filling, using a mixer, combine sweet potatoes, 1 cup of sugar, melted butter, eggs, vanilla or Bourbon, salt, and spices. Mix thoroughly.

    Add the milk and continue to mix. Pour the filling into the pie crust and bake for 35 to 45 minutes, or until a knife inserted in the center comes out clean.

    Place the pie on a rack and cool to room temperature before covering with meringue.

    For meringue, use Whisk attachment on mixer, beat the egg whites until soft peaks form; beat in 1 tablespoon at a time of 1/4 C sugar.

    Continue beating until the sugar dissolves and mixture is glossy and stiff, but not dry. With a spatula, spoon the meringue onto the pie, forming peaks.

    Make sure the meringue touches the crust all around. Sprinkle with a pinch of granulated sugar. Bake for 10 to 12 minutes, or until delicately browned. Cool and serve.

    Cooks Tip: Meringue can be replaced with cool whip or homemade whipping cream! Yummy home made is the BEST! :) Enjoy!
