this pie recipe it reminded of my favorite ice cream.

  • 1 c
    semi-sweet chocolate chips
  • 1/3 c
    whipped cream
  • 1 Tbsp
    light corn syrup
  • 2 1/2 tsp
    mint extract
  • 1
    chocolate pie crust (10 inch)
  • 1 c
    chocolate covered creamy mints
  • 4 oz
    cream cheese,softened
  • 1 1/2 c
  • 2 Tbsp
    chopped fresh mint leaves
  • 2 pkg
    instant vanilla pudding mixes
  • 3
    drops green food coloring
  • 1
    carton frozen whipped topping,thawed,divided

How to Make Mint Chocolate Pie


  1. In a saucepan,melt chocolate chips,whipped cream,corn syrup and mint extract over low heat;stir until smooth.Spoon into the crust.Sprinkle with chocolate covered creamy mints.
  2. In a mixing bowl,beat cream cheese until smooth.Gradually add milk and chopped mint leaves;mix well.Add pudding mixes and green food coloring;beat until smooth.Fold in 11/2 cups whipped topping.Spoon over chocolate covered creamy mints.Spread remaining whipped topping over the filling.
  3. Refrigerate for at least 3 hours before serving.
    Garnish with chopped mint leaves.
