The beautiful Gulf Coast of, FL
Updated on Apr 27, 2013

This is such a no-brainer that I am hesitant to post it..... but it turned out sooooo light and delicious and was super quick/easy! Some serious cream cheese and pineapple love here. Needed a light, refreshing dessert and only had a few ingredients on hand. This made a gorgeous fluffy pie topped with chopped walnuts. Do not have photo to post but it made a beautiful presentation.

Ingredients

  • 8 ounces cream cheese, room temperature
  • 1 stick butter, softened
  • 1 cup confectioners' sugar
  • 1 tablespoon milk or cream
  • 1 teaspoon vanilla extract
  • 2 cups heavy cream, whipped and sweetened to taste
  • 1 - chocolate graham cracker crust, baked
  • 20 ounces can crushed pineapple, drained
  • 1 cup chopped walnuts

How To Make "mile high" pineapple fluff pie

  • Step 1
In mixing bowl, beat cream cheese, butter, sugar, milk/cream, and vanilla until smooth.
  • Step 2
Whip heavy cream until soft peaks form. Fold whipped cream and drained pineapple into cream cheese mixture. Mix very well.
  • Step 3
Spoon all into your prepared graham cracker pie shell. Top with chopped nuts and chill 30 minutes to 1 hour prior to serving. (Mine was perfect and ready to serve w/in 30 minutes). Just doesn't get any quicker or easier than this!
  • Step 4
This makes a very tall, fluffy pie. Very light, refreshing, and not too sweet. Somewhat tangy. Any type of graham or cookie crust would be good. The chocolate crust was a surprising contrast and really kicked it up a notch. Add chopped nuts to taste. Makes for a very pretty pie and lends great flavor and texture to the tangy fluffliness.
