I love this fresh lime twist on a traditional buttermilk pie. It's tangy, tart and sweet all in one. I enjoyed it chilled in the fridge but it was delicious at room temp too. What a great summertime pie!

Ingredients

  • 1 1/2 cups sugar
  • 3 tablespoons all-purpose flour
  • 1 cup buttermilk
  • 3 - eggs, slightly beaten
  • 1/4 cup butter, melted
  • 1 tablespoon lime zest
  • - juice of 1 lime
  • 1 cup coconut
  • 1 - unbaked 9-inch deep dish pie crust

How To Make lime coconut buttermilk pie

  • Step 1
    Pre-heat oven to 425 degrees. In a large bowl, combine sugar, flour, and buttermilk. Add beaten eggs. Beat until smooth. Mix in the melted butter, the lime zest and juice, and the coconut. Pour into the pie crust.
  • Step 2
    Bake for 10 minutes at 425 degrees, then reduce heat to 350 degrees and bake approximately 25 to 30 minutes or until a knife inserted near the center comes out clean. Remove from oven and let cool on a wire rack.
