lemon plum custard mini pies

Yes I have to buy unique fruits in season. So when I seen these lemon plums I had to buy. Theres not much on these cute little fruits when I googled, other than the fact that there only around 5 weeks of the year, and they have a lemony taste but sweater than red plums. I was going to make smoothie but so boring so I added to a easy custard recipe. Made them mini because these plums are so mini cute themselves. If ya cant find, because there only around for month of feb, and maybe march feel free to use regular plums. The sweetness of custard to sweet tart of lemon plums MMWAHH!!!!

Ingredients

  • STREUSEL
  • 1/2 cup all purpose baking mix
  • 1/4 cup quick cooking oats
  • 1/4 cup brown sugar
  • 1 tablespoon butter
  • 1/2 teaspoon freshly grated nutmeg
  • PIE
  • 1/2 cup all purpose baking mix
  • 1/2 cup sugar
  • 1/2 cup milk
  • 2 tablespoons softened butter
  • 2 - eggs
  • 2-3 - sliced lemon plums (2 1/2 cups)

How To Make lemon plum custard mini pies

  • Step 1
    Heat oven to 350 and spray cupcake pan. In small bowl combine all streusel ingredients, cutting butter in with knives till crumbly. Set aside.
  • Step 2
    In med bowl combine and wisk all pie ingredients except plums, combine well. Pour into cupcake pan (it made 9) Arranges few slices plums in each.
  • Step 3
    Bake 15 min. Sprinkle streusel on top of each. Bake another 12-15 min til knife in center comes out clean. Cool 20min. Serve warm. Store in refrigerator.
