Lemon Meringue Pie
How to Make Lemon Meringue Pie
- Beat egg yolks slightly. Add lemon juice, condensed milk & vanilla. Mix well then pour into graham crust, add meringue & brown. Cover & refrigerate several hours before serving.
- I wash, dry & use the plastic top that comes with the graham crust to keep pie covered.
2 egg whites
4 Tbsp sugar
1/8 tsp cream of tartar*
dash of salt
1 tsp pure vanilla extract
Beat egg whites w/electric mixer until frothy. Add in the cream of tartar and salt and continue beating another minute or two. Add the sugar and beat until stiff peaks form (about 2 minutes). Add in the vanilla and beat for another minute or so. Spread onto pie & bake @375 until brown (about 10 or so minutes).
- * If you don't have cream of tartar you can use 1/2 teaspoon of baking powder. If you don't have baking powder just use a little more than a dash of salt.
