How to Make Lemon Delight Pie
- Place egg yolks, sugar, lemon juice, zest and salt in the top of a double boiler or in a metal bowl and place over boiling water. Beat with whisk constantly until thickened.
- Let cool. Beat the heavy cream until stiff peaks form. Fold into cooled lemon mixture. Pour into pie shell. Top with whipped cream. Refrigerate until set. Store in fridge.
